I have a confession – I’m not a huge fan of Greek yogurt. So, when I was given a free tub of Fage yogurt, I struggled for ideas. This became a struggle for healthy ideas, because this happened not too long ago:
And let’s not forget that I have coconut mint ice cream in my freezer.
Did I have some amazing food? Yes. Do I need to feel better about my health by balancing some less insane meals into rotation? Yes. There’s been an increase of salad in my life, which led me to experiment with the Fage I had. This is what I came up with:
Yogurt Salad Dressing
makes enough to dress one large bowl of salad
1Tbsp Greek yogurt (I used the Fage)
1tsp extra virgin olive oil
1tsp good quality vinegar (I’ve used pumpkin spice white balsamic vinegar, apple cider vinegar, and rice vinegar so far)
1tsp agave nectar (or other sweetener)
1tsp garlic powder or onion powder (depending on my mood)
Mix everything together, and dress your salad.
I made this for my best friend when she was visiting and she was impressed. Any Greek yogurt is fine. I will say that the Fage was fluffier in texture than I was expecting. I liked that. You can use normal yogurt too, it will just be a thinner consistency when you mix everything up. Feel free to try different aromatics too.
