Kenji’s Vegan Ramen, a Kitchen Conclusion (and a spice blend for you)

I’m a huge fan of Serious Eats.  Besides referring to it for general cooking questions I might have, I really adore their series “The Vegan Experience” (and I’m not vegan… heck, I’m not even vegetarian).

One of the vegan recipes that I bookmarked but was intimidated by the number of ingredients and steps was Kenji Lopez-Alt’s Ultimate Rich and Creamy Vegan Ramen With Roasted Vegetables and Miso Broth.  What does one do when they are not sure they can pull off a recipe on their own?  In my case, it was finding a friend who said “So when you want to cook together? I want to do something new and crazy.  Just something fun, y’know?”

New?  Check.  Crazy?  Check.

Let’s do this thing!

Our observations:

The ingredient list isn’t all that bad.  It would have been nice if there had been a condensed shopping list.  It’s essentially this:

eggplant
onion
garlic
ginger

napa cabbage

sweet potato
shichimi togarashi*
mirin*
soy sauce*
miso*
tahini*
noodles

Everything with an asterisk were things already in my pantry.  Well, except for the shichimi togarashi but we’ll get to that later.  And for the ramen noodles, Jared and I decided to be extra experimental and try the pasta with baking soda trick.  Several times, we asked each other if we had forgotten something because our shopping cart seemed like it didn’t have nearly enough ingredients waiting to be paid for.

One hurdle done.

But the doing?… ah, this was the real challenge.

And half the challenge was matching the ingredient list with the ramen component we were working on.  We both really wanted to reformat the whole recipe for easier reading in the kitchen.

On my own, I had read the recipe through a couple of times but I wish I had studied the photos in the blog post more.  We didn’t notice that the sweet potatoes and the maitake were not mixed on the baking sheet.  It made for a slight inconvenience to pick out sweet potato chunks for the blender.

For the soy-tare, I would leave the ginger and scallions in large identifiable pieces because you have to separate it from the quartered shiitake caps when done.

We also recommend upping the eggplant from 1 small to 2 small.  We had very little eggplant compared to the number of servings when all was said and done.  Also, you don’t get a lot of cooked liquid from 1 small eggplant.  Spinning out said liquid felt fiddly.

But more importantly, how did it taste?

The components of the ramen are their own were good but nothing I felt impressed by.  The baking soda noodles were really interesting!  The baking soda made the noodles a bit chewier, and taste very eggy.  The sweet potatoes baked in the spice blend gave a nice heat that quick dissipated.  But, altogether, the dish was very lovely and satisfying.  Jared’s wife got a gluten free version for health reasons.  We replaced the soy sauce with GF tamari in the recipe, and made a separate pot of rice noodles just for her.  Her reaction was “This is amazing!”  We also fed a friend of theirs who is vegetarian and planning to go mostly vegan.  The friend thought it was one of the best things she had had in a very long time.  In short, those with dietary restrictions are probably going to enjoy it best.

I can definitely see myself making parts of the recipe for other noodle and soup recipes.  I’m not sure if I’ll ever make the whole recipe on my own (but if I do, I think I would spread it over two days).  Jared and I may make it again, but not for at least 6 months and we’ve had time to recover from the amount of steps this ramen involved.

I will definitely make the sweet potatoes again.  I never thought to bake them with shichimi togarashi before, and I like the idea blending some of it to give the broth more body.  True story, I’ve never cared for shichimi togarashi before.  So I didn’t have it in my pantry, nor did I see the point in buying it for just this recipe.  So I made it with ingredients I did have in my pantry.  The spice blend is supposed to be a blend of seven spices.  (Shichi means seven.)  I used five, so I’m going to start calling my blend “five-mi togarashi.”  It is not traditional but I was quite happy with it.  (I suppose I could also call it go-mi togarashi since go is five in Japanese).

FIVE-MI TOGARASHI (GO-MI TOGARASHI)

1 tablespoon mandarin orange dust
4 teaspoons gochugaru
2 teaspoons toasted sesame seed
1 teaspoon ground ginger
1/8 teaspoon ground white pepper

Mix altogether, and store in a tightly fitted lidded jar.

An evening in photos, The Amsterdam, Rhinebeck, NY

I visit a friend in the Rhinebeck/Dutchess County area at least once a year.

Previously, we would spoil ourselves and have a nice meal at Another Fork In The Road.  That restaurant closed unexpectedly during the spring.  However, when one door closes, another one opens.  We had a wonderful meal at The Amsterdam last weekend, when I was in Rhinebeck.

Arctic char with fingerling potatoes, grilled bok choy, grilled scallions and green goddess dressing.  In my previous post, I mentioned grilled scallions.  This is what I was referencing.  I could find no faults with this dish.

Someone at my table ordered from the specials menu, short ribs braised in red wine.  Overall flavor was well received, but there was a comment that the ribs were not as fork tender as it should have been.

Honey cakes for dessert.  They were delicious and not a monstrous size.

The photos aren’t even everything that was ordered for our table.  We ended up with some leftovers, which I in turn used to make a posh breakfast: toast with grilled green beans, mushrooms, and mixed nuts.  I am determined to make something like this again in my home kitchen on a weekend where I am feeling decadent.

Cherry Bombe, The Cookbook, a cookbook review

When I first saw the cover for Cherry Bombe, The Cookbook, my first thought was “is this just a collection of cherry recipes?”  A quick look proved me very, very wrong.

From its website:

Cherry Bombe celebrates women and food through our biannual magazine, the weekly Radio Cherry Bombe podcast, and our Jubilee conference. What rocks our world? Sharing the stories of everyone from industry icons to notable newcomers, encouraging creativity in the kitchen, and bringing the Bombesquad together whenever possible. Our first cookbook, featuring 100+ recipes from 100+ of the most inspiring women around, will be out this October from Clarkson Potter.

Oh.

And per the book’s index, there only appears to be six recipes with cherries in them.  (Just in case you were dying to know.)

So then… what is in this book?  That’s the real question, isn’t it?  I’m happy to report that I literally got the last review copy available from Blogging for Books to satisfy my curiosity and yours.

The thing about this book:  It’s pretty diverse in terms of recipe selection and sophistication.  It makes me really look forward to cooking from this book.  (No recipe testing yet at this time.  My attention is still held by Martha Stewart’s Slow Cooker book.)

The chapters are standard: Mains, Soups and Salads, Sides, Apps/Snacks/Sips, Cookies/Cakes/Pies, and Sweet Treats.

Here’s a sampling of what I’m looking forward to and why:

  • Pink Spaghetti with Beet and Ricotta Sauce – I like beets but rarely cook them.  Plus, this recipes has only 10 ingredients, two of which are salt and boiling water.  It seems very approachable.
  • Filipino Vinegar Chicken – What Filipino food I have, has always been pretty delicious.  I would love to become more familiar with it.
  • Shroomy Cheeseburgers with Maple Thyme Caramelized Onions – Just the title alone sounds amazing.  While more complicated than the burgers I normally make, nothing immediately looks scary or impossible.
  • Chicken Meatballs in Roasted Lemon Broth – The broth is nothing that readily makes sense to me.  Broth ingredients are lemons, olive oil, shallot, bay leaves, cinnamon stick, chicken broth, dried mint, potatoes, cipollini onions, and spinach.  I can’t imagine how this tastes, so I feel the need to make it.
  • Roasted Asparagus and Scallions with Burrata – I recently had dinner at The Amsterdam in Rhinebeck, NY.  My plate was fish with grilled bok choy, grilled scallions, and green goddess dressing.  I was surprised at how mild the grilled scallions were.  I imagine that roasted scallions will the same, and I bet it’s delicious with asparagus and burrata.
  • Best Friend Cheesecake – Overall, it’s a straightforward and basic cheesecake recipe.  That’s not a bad thing.
  • Dad’s Perfect Sweet Potato Pie – Submitted by Joy Wilson, aka Joy the Baker.  Also, sweet potato pie will always be my favorite pie ever.
  • Irish Soda Bread – Interestingly, this falls into the Sweet Treats chapter.  I think it appeals to me just because this recipe is baked in a 9×5 pan.  I like baking in my loaf pan.  I bake a lot of recipes in it that were meant to be muffins and such.

Other comments about the physical book, and not the content:  I suspect that the cover will be prone to wear and tear.  I haven’t even owned this book for 24 hours yet, but the corners of the front look like they’ve seen better days.

Every recipe has an accompanying photo.  The general style of the photography reminds me of current day Bon Appetite – a bit more HDR looking, a bit too brightly lit.  It’s not my favorite style, but I know it appeals to others.

As I ponder which cookbooks to cull from my collection, I feel confident that Cherry Bombe will stay in it.  There’s just too many recipes I legitimately want to try.

GERMINATION!

I’m stupidly excited. Seeds were planted on Sunday. The first signs of life showed up yesterday in the re-purposed strawberry container that is holding purslane. The purslane seeds I bought are a different variety than what grows wildly here – Goldberg Golden Purslane (Portulaca oleracea sativa). According to Johnny’s Selected Seeds website, it is:
“Crisp and mild. Much larger than the wild form. Pick as needed to within 2” of the base; new stems and leaves regrow. Known as “verdolaga” in Latin America. Sensitive to frost. After spring frost danger, sow about 1/2″ apart in the row, cover 1/4″. Thin to 4-6″ apart. Can also be transplanted. Avg. 65,000 seeds/oz. MINI: 0.15 gm., avg. 350 seeds, sows 15′. Mini: 350 seeds.” It is heat tolerant and good for salad mixes.

Purslane has more omega-3 fatty acids than any other leafy veggie, which is why I decided to grow it. The stems, leaves and flower buds are all edible. I’ve only ever tasted the leaves, but I liked it.

As of tonight, I decided that the baby purslane was cute enough to photograph. I noticed that some of the other seeds have germinated today – my micro salad mix, mizuna, and bak choy. Shiso has yet to show signs of life. But they all kind of look the same right now, all a very pale green. Meanwhile, baby purslane is orange/red. ^_^
